How To Use Steve's Rubs

 

First, use only good cuts of meat, fresh veggies and other fresh ingredients when cooking.

 

Second, Remember to Keep Your Heat LOW and Cook it SLOW.

 

Third, Use my rubs to enhance the flavors of your quality ingredients for any meal.

 

Fourth, Have Fun - Experiment - add juices or sauces that compliment the meat or veggies ( like Lime Juice for Chicken, Turkey, and Fish; like Bourbon for Beef or Venison, like Pineapple for Pork, you get the idea... ) 

 

Cut Back on Salt - most of my spice blends are salt-FREE.  Just a sprinkle of my blends will enhance the flavor of any foods without salt.

 

If you have dietary restrictions - consider using my existing spice blends or contact me so I can create a blend just for your needs.

 

For large cuts of meat - like a roast or loin - roll out some plastic wrap that will wrap completely around the meat. Then spread the rub mixture on the plastic wrap using a formula of about 3 teaspoons per pound of meat - and adjust to your tastes. Carefully roll the meat in the plastic wrap and store refrigerated for up to 48 hours ( more time = better flavor ). When you are ready to cook, take the plastic wrap off and grill or oven roast or smoke as you would normally.

 

For small cuts of meat - like chops or kabobs - place the meat in freezer storage bags, dump in the rub mixture using a formula of about 3 teaspoons per pound of meat - and adjust to your tastes. Close the bag with some air inside, toss the bag so the meat is completely coated, then squeeze out the excess air and store refrigerated for up to 48 hours ( more time = better flavor ). When you are ready to cook, take the meat from the freezer bag and grill or oven roast or smoke as you would normally.

 

To create a Schmear - combine 1 teaspoon from any of my rubs with 1 cup of any unflavored low-fat yogurt or sour cream or mayonnaise or any combination of these three. Blend well, keep covered and refrigerated for up to 48 hours.

 

To enhance any soup or stew - season the meat as above, then add to your cooking process.

 

For my vegetarian friends - season the veggies as you would for the grill, or just spoon in my spice blends to your taste as you simmer.
